Our Favorite Quick bread recipe

There’s something special about recipes that bring comfort and tradition into the kitchen. This week, we’re sharing a favorite—one that pairs perfectly with slow mornings, a cozy apron, and a well-loved linen towel at your side.

Baking is more than just a process—it’s an experience, one that is enriched by the little details: the warmth of fresh bread straight from the oven, and the natural beauty of high-quality linen by your side. I’ve had this recipe since my early 20’s and I make it all year round. It’s so quick and easy that you can make it on a whim and have fresh bread in under an hour! I call it Beer Bread because a Guinness or a root beer are my go to’s for this recipe, but it’s also closely related to Irish Soda Bread.

 

No-Knead Beer/Soda Bread Recipe

Ingredients:

  • 3 cups (375g) all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 2 tablespoons sugar (optional)

  • 1 (12 oz) bottle of beer (lager, ale, or stout—your choice! I’ve used both light and dark beers, as well as ginger ale and root beer, they’re all delicious and each add their own little flavor. The alcohol bakes off so you don’t have to worry about alcohol content in the bread.)

  • 2+ tablespoons melted butter (for brushing)


Instructions:

  1. Preheat Oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, and sugar.

  3. Add Beer or Soda: Pour in the beverage and stir with a wooden spoon until just combined. The batter will be thick and lumpy—don’t overmix!

  4. Transfer to Pan: Spoon the dough into the prepared loaf pan and spread it evenly.

  5. Brush with Butter: Melt the butter and brush it over the top for a rich, golden crust.

  6. Bake for 45–50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.

  7. Cool & Serve: Let it rest in the pan for 5 minutes, then transfer to a wire rack to cool before slicing.


Flavor Variations:

  • Cheesy Herb: Add ½ cup shredded cheddar and 1 teaspoon dried herbs.

  • Garlic Butter: Mix 1 minced garlic clove into the melted butter before brushing.

  • Sweet Twist: Use a fruity beer and add ¼ cup honey.

Enjoy warm with butter, soup, or as a side for hearty meals!
