You’ll Need:
A mix of your favorite veggies: carrots, sweet potatoes, Brussels sprouts, cauliflower, or parsnips.
Olive oil
Sea salt & pepper
Fresh herbs (optional)
Directions:
Preheat your oven to 425°F (220°C).

Cut veggies into evenly sized pieces for uniform roasting.
Toss with olive oil, salt, and pepper, just enough to coat, not drench.
